Studio Projects.
Our Studio is a place where creative curiosity is coupled with developing new processes and methods. We call these experiments Projects. Some of these fully formed Studio Projects make their way into our Bar 7, Bar 8 and Bar 9 chocolates. These are small-batch, ever changing chocolate bars, that showcase the changing of the seasons and our passion for new ideas, new ingredients and new processes.
The starting point for all of our Projects comes from trying to creatively connect the unconnected – this might be to answer a question we have asked, something new we have learned, or to explore new ways to improve upon an existing method or process. The really good ideas from the Studio generate their own exciting momentum, and this is what we explore in our Project Bars.
We’re a small team and the Studio is where unpredictability happens, where we listen, learn, research and test, and where we make lots of experiments. Ideas are fragile and the ever changing Bar 7, Bar 8 and Bar 9 chocolates reflect these inquisitive explorations, with the only ever constant being change.

Seeing things in a new light.
Many of the new successful techniques, methods and processes which start life in our Studio Projects over time become part of our other Edition chocolates. The ‘Absolute’ technique is now being used in our Heritage and Series bars for example, as are ‘Lacto-fermented’ ingredients, while new conching and roasting profiles are being used in our Midnight Bars.
The Studio Projects allow for the development and encouragement of new ideas, where we start to see things in a new light… and are often the spark for us to ask new questions, a place where Bar 10, 11 and 12 are born.
