Bar 7 : Double-Fermented Cacao
63% Cacao. Made in Limited Small Batches. The Studio Projects Bar 7 is made using our method of double-fermentation, where we ferment the cacao for a second time using fresh, organically grown fruit. This creates unique flavour notes deep within the chocolate.

Bar 8 : Lacto-Fermented Fruit
57% Cacao. For the Studio Projects Bar 8, fresh organic fruit is lacto-fermented and candied in-house through natural LAB fermentation. This traditional preserving technique brings a wonderful fruity depth to this small-batch limited chocolate.

Midnight Vanilla
90% Cacao. Made with both single-origin cacao and Bourbon vanilla beans from Madagascar. We use a double-conching process to reveal the clarity and depth of the natural ingredients.

Midnight Espresso
75% Cacao. This dark chocolate is made with both cacao and coffee beans from Peru. The ingredients are stone-ground together for a refined, smooth, and balanced flavour.

70% Cacao. Made with just two natural ingredients — single-origin cacao and unrefined cane sugar — this dark chocolate expresses the flavour and character of its cacao origin.

60% Cacao. A dark-milk chocolate created through a refined conch and ‘crumbing’ process that develops a gentle caramelisation to balance the rich darkness.

63% Cacao. Dark chocolate with gin, mint, and delicate citrus, created through our olive oil “Absolute” process using natural botanical ingredients and London Gin.

70% Cacao. A dark chocolate with rum, ginger, lime, and spice, created through our slow “rum soak” process and finished with pieces of rum-soaked candied stem ginger.

63% Cacao. A dark chocolate stone-ground with estate-bottled olive oil from Greece, and finished with beautiful, contrasting sea-salt crystals – creating a natural elegance.

The Winter Nine
50% Cacao. A smooth oat-milk chocolate with orange, warming spices, and our own dried and ground chilli peppers, finished with pieces of candied stem ginger.

Hazelnut Chocolate
50% Cacao. A smooth hazelnut chocolate with whole roasted hazelnuts coated in maple sugar and sea-salt. This is an incredible combination of cacao and hazelnut.
