Our 90% Midnight Vanilla bar is a testament to the art of trying to achieve a perfect ‘balance’ in a dark chocolate.
This bar features stunning organic vanilla beans with beautiful sweet-cooling vanilla seeds that enhance and compliment the richness of the dark chocolate.
Crafting this bar is a challenge; it starts with selecting single-origin cacao capable of maintaining ‘complexity’ at a very high cocoa content, while we attempt to get the bitterness to be significantly reduced. Using the highest quality cacao beans and vanilla beans from Madagascar makes for a stunning pairing, with them both being grown in the same region.
So for this bar we developed through experimentation very precisely calibrated profiles for roasting, stone-grinding and conching. This is to harmonise the cacao’s deep, nuanced flavours with the vanilla, as we remove the bitter acidic compounds that are naturally found in the cacao.
