So this is what the future of dark chocolate looks like.
Dark chocolate redefined. Impossibly smooth and yet full of robust dark flavours. This is what dark chocolate should be. For each of the chocolates we make in the Midnight Edition range we have created individual roasting profiles for the single-origin cocoa beans. To transform the chocolate further we then use unique, non-linear / double-conching cycles to smooth out the flavour notes. These methods remove much of the unwanted acidic sourness and tannins found in high percentage chocolate.

The Midnight Edition range is defined by a high cacao content and a few select ingredients, sourced from the world’s best growers – and by the careful, innovative way we use them. By removing complexity, the focus and simplicity of the Midnight range always remains on the purity and balance of the ingredients and single origin of the cocoa beans.
In the Midnight range sugar is used as a small part of a focused ingredient list. Using far less sugar allows the other natural ingredients to shine in the top notes, ensuring that cane sugar never masks the flavour profile or distracts from the chocolate’s true focus.
This is chocolate made to deliver a balanced, dark intensity.
Every bar combines natural processes with innovative methods to achieve a refined balance within the darkness of the high cacao level. Natural techniques such as Maillard caramelisation, ‘crumbing’, and non-linear / double-conching are used to bring out the chocolate’s true character.
Some of the natural cacao compounds in dark chocolate can overwhelm the eating experience if not treated with care. Each Midnight variation pairs exceptional natural ingredients, such as vanilla seeds or roasted coffee beans, with the aim of not simply combining them, but to harmonise them.
A naturally pure chocolate? Yes, please.
We don’t have to create unique roasting and coaching profiles and take our time to naturally develop the flavour notes of our chocolate and remove tannins and natural acidic compounds. We could use mass manufacturing shortcuts like using Dutch-processed cocoa powders and use excessive sugars and heavily processed oils and fats like many others in their dark chocolate. But we don’t.

All of the choices we make to produce your chocolate are made with the Earth in mind. We buy ingredients and materials from reputable and ethical supply partners. Our packaging is fully recyclable and our cacao comes from sustainable sources using fair working practices.
What is an ‘ingredient’?
We use natural ingredients, like real coffee beans and real vanilla beans, not processed extracts or flavourings (what is a vanilla essence or extract anyway? are they ingredients? or are they marketing terms for the absence of the real thing?). In fact we don’t add anything to your chocolate which uses the prefix or suffix of ‘flavouring’, ‘essence’, ‘extract’ or anything from a laboratory needing an E-number.
