We grow the fresh mint leaves ourselves, and source a single origin forastero cacao for this chocolate. The cacao is both ethically and sustainably sourced from good relationships with suppliers in Ecuador and Columbia.

The Story of this Bar
Magical chocolate. Made with simplicity and creativity.
Inspired by the classic London Gin and Mint julep cocktail our chocolate bar captures this essence through our creative and innovative “Absolute” method.
This is a new method we developed at Mayhawk to change some of the traditional chocolate making processes, but it is in fact an older process learnt from researching the early creators and designers of luxury perfume.
For this bar we created a special way of infusing organic olive oil with fresh mint leaves, citrus peel, and natural gin botanicals. This infusion is then combined with prepared cacao nibs and a generous measure of London Gin.
After a further special aging process the result is a beautiful and unique dark chocolate with balanced and harmonious flavours of gin, mint, and delicate citrus.
