The Christmas Bar
At Christmas we wanted to create a unique Seasonal Bar for the Holidays … so we did, a Plum & Ginger white chocolate bar combined with another, a rich dark-milk chocolate and toasted-salted Almond Nibs bar. We first preserved the stem ginger by candying it, and we preserved the fresh plums by lacto-fermenting them.
Then we made our white chocolate with much less sugar than normal white chocolates, so it wasn’t too overly sweet, and we used our ‘darksome’ milk chocolate as the base for the other bar. Putting both of the bars ‘together’ was an early idea in our R&D, as Christmas should be about making something that is a little bit more remarkable and special.
We also wanted to try out a few new techniques and a new flavour combination. After carefully refining our thoughts, and after several curious detours, we came up with this elegant and unique ‘fruit & nut’ bar, made for this special Holiday season.

We specifically sourced a single origin criollo cacao for the dark-milk chocolate from Peru. The white chocolate uses cocoa butter from Columbia. The cacao is both ethically and sustainably sourced from good relationships with suppliers.
