We source forastero cacao for this chocolate from good relationships with suppliers in Ecuador and Columbia. The famous rum we use for the soak has a long British heritage.

The Story of this Bar
Magical chocolate. Made with simplicity and creativity.
Our Dark & Stormy chocolate bar features a subtly spiced dark chocolate, with large pieces of rum-soaked candied stem ginger.
The light touch of ginger, cinnamon, and a bright citrus lime note are harmoniously blended with the cacao and an amount rich, dark molasses cane sugar, is added in the stone-grind.
To create this bar we developed a unique “Rum Soak” process, infusing and maturing a measure of famous dark rum with natural spices, molasses, and fresh lime oil and zest, for over three months.
Then we combine it with un-roasted cacao nibs, where it undergoes a further special process, which we have developed, before being roasted and conched to achieve a robust and perfectly balanced spiced dark chocolate.
Into this spiced chocolate base we add large pieces of candied stem ginger which we have soaked in rum for several months, adding a beautiful ginger spiced heat to the chocolate.
