“Studio Projects | Bar 7” is a breakthrough dark chocolate for us, crafted using our innovative double-fermentation method.
This is where organic fresh fruit is fermented with the prepared cacao nibs for seven days, before being stone-ground into chocolate, (we experiment making small batches of chocolate for Bar Seven using different types of fruit and cacao).
Depending on the type of seasonal fruit and cacao used we can now alter the natural flavour profile of the chocolate, before the traditional chocolate making methods even begin, (we have developed specific roasting and conching profiles for Bar Seven).
In developing this breakthrough process we can infuse the chocolate with a deep, and natural fruit flavour, creating a unique richly integrated profile.
Developed in our research experiments, Bar Seven (the seventh batch in the experiments) redefines traditional chocolate-making, and it showcases our commitment to pushing the boundaries of our processes and methods.
It remains one of the finest dark chocolates we’ve ever created.
