We use fresh British Cherries and source a blend of criollo and forastero cacao for this chocolate. The cacao is both ethically and sustainably sourced from good relationships with suppliers in Madagascar, Ecuador and Columbia.

The Story of this Bar
Magical chocolate. Made with simplicity and creativity.
Our innovative “Bar Nine” milk chocolate is crafted using a unique double-fermentation method, where our prepared cacao nibs are (re)fermented with organic fresh fruit over seven days before being stone-ground into chocolate.
We developed this new method in our experimental research as a way of bringing natural flavours into the cacao before the traditional chocolate making methods even begin.
This process infuses the chocolate with subtle, harmonious fruit notes, creating a reimagined milk chocolate experience.
A standout in our experiments, “Bar Five” (the fifth experimental batch) pairs beautifully as a milk chocolate with its darker twin, “Bar Seven”, showcasing our ongoing commitment to pushing the boundaries of craft chocolate-making.
